Last week, I took a road trip to Atlanta with a couple of my friends.  When I got home my parents acted like I had been gone for a year or something lol…hello it has only been a couple of months (but they are so cute).  So at the end of the week, my mother planned this special going away dinner and words cannot describe how good it was.  She made this creamy rice dish with shrimp and asparagus and a side salad.  But the Pièce de résistance was the dessert, which was a remake of the classic Tiramisu recipe. Maybe I should leave home more often!

Those Who Can’t Teach….Do

My friend,Nyemale, is always talking about how she can’t cook that well and why can’t I just cook the meal….well last week she proved that statement to be untrue.  We were sitting around my house and started to get a little hungry, so I told her if she wanted to eat she would have to cook…so she did!  The meal was simple but none the less outstanding.  It was a pasta dish that consisted of shrimp and basil and a little pad of butter to finish it off.  She also rounded out the meal with a side order of green peas…YUM!

But the soon to be Betty Crocker was not done yet….

The next day when she was over here she made some REALLY good sugar cookies (Recipe Below courtesy of allrecipes.com)

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
  3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Do I smell a Bar-B-Que!!!!!!

Today marks the beginning of my LIFE as a BLOGGER!!!!  I have grown up around cooking my whole life, and I can honestly say it is my biggest passion.  I’ve been cooking since I could hold a spoon and now I think it is time to share my passion with the WORLD!

Yesterday my friends and I decided to take advantage of the nice weather by having a bar-b-que.  We all brought a dish to the shindig, and my contribution was my FAMOUS fresh corn salad with basil oil.  The dish was inspired by a corn salad I saw Giada De Laurentiis (one of my favorite Chef’s) make, but with my twist on it.  The ingredients are quite simple: Yellow Corn, Grape Tomatoes, Feta Cheese, Basil, and Olive Oil…YUMMM

Corn Salad Recipe

  • 1 (16oz) bag of Frozen Sweet Yellow Corn
  • 1 Pint of Cherry or Grape Tomatoes
  • 1 (6oz) container of Feta Cheese
  • 1 pkg. of Fresh Basil
  • 1/3 cup Extra Virgin Olive Oil
  • Salt and Pepper to taste

First take the entire package of basil and place in a blinder with the olive oil and salt and pepper.  Blend ingredients together until the basil is chopped finely.  Set the basil oil aside to rest.  Then in a mixing bowl add the tomatoes, feta, and corn together.  Next pour the basil oil on the salad and place in the refrigerator for at least 1 hour.  Take it out and let come to room temperature before you serve.
